Ingredients
1.5 lb boneless skinless chicken breasts
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp dried dill
1/2 tsp garlic powder
6–8 oz pasta (cellentani, penne, or bowtie)
6–8 cups sliced romaine lettuce
1/4 cup grated parmesan
1/3 cup croutons
1 cup eggless Caesar dressing
1 tbsp fresh lemon juice
1 tbsp Dijon mustard
1 tsp capers
1 tbsp olive oil
Instructions
Preheat oven to 400°F (200°C)
Toss chicken with salt, pepper, dill, and garlic powder
Heat olive oil in a skillet, cook chicken 5-7 minutes per side until 165°F internal temp
Meanwhile cook pasta 1 minute under al dente; drain
Whisk dressing with lemon juice, Dijon, and capers
Add pasta, romaine, chicken, and dressing to a large bowl
Top with parmesan, croutons, and additional lemon juice as needed
Notes
Substitute chicken thighs for breasts; use fresh dill (1.5 tsp) after cooking
Kale or mixed greens work instead of romaine
Make cooked chicken and pasta 1 day ahead; store separately
