Ingredients
1 boneless, skinless chicken breast (6 oz)
1 head romaine lettuce
1/2 cup corn kernels
1/4 red onion, finely chopped
1 jalapeño, seeded and minced
1/4 cup pumpkin seeds
1 avocado, diced
3 tbsp plain Greek yogurt
2 tbsp lime juice
1 tbsp maple syrup
1 tsp hot sauce
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
Instructions
Preheat grill to medium-high heat (375°F/190°C). Season chicken with paprika, cumin, salt, pepper, and half the olive oil.
Grill chicken for 5-6 minutes per side until cooked through (internal temperature 165°F/74°C).
Let chicken rest, then chop into bite-sized pieces.
In a large bowl, toss romaine, corn, red onion, jalapeño, pumpkin seeds, and avocado.
Whisk Greek yogurt, lime juice, maple syrup, hot sauce, and remaining olive oil to make dressing.
Add dressing to salad and toss lightly. Top with chopped chicken and serve immediately.
