Description

A bright, crunchy summer side that’s easy to make and perfect for picnics, backyard barbecues, and potlucks.

Ingredients

Scale
  • 2 cups corn (fresh, canned, or frozen)
  • 1 large cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the corn, cucumber, red bell pepper, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill for at least 30 minutes before serving to let the flavors meld.

Notes

Best when chilled, this salad can be made ahead but is best consumed within 48 hours for optimal freshness. Consider serving it as a side to grilled meats or on a bed of greens.
