Instructions
- In a large bowl, combine the corn, cucumber, red bell pepper, red onion, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill for at least 30 minutes before serving to let the flavors meld.
