Description
A bright, zesty bean salad featuring black beans, corn, bell peppers, tomatoes, cilantro, and avocado in a lime and olive oil dressing. Perfect as an appetizer or side dish.

- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1 lime, juiced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Prep the produce first. Dice the red and green bell peppers and red onion into small, even pieces so each bite is balanced.
- Rinse and drain the canned items. Empty the black beans into a mesh strainer and rinse under cold water until the water runs clear.
- Combine the main ingredients in a large mixing bowl, gently mixing together the black beans, corn, diced red and green bell peppers, red onion, halved cherry tomatoes, chopped cilantro, and diced avocado.
- Make the dressing in a small bowl by whisking together the juice of 1 lime, 1/4 cup olive oil, a pinch of salt, and freshly cracked black pepper to taste.
- Dress and chill the salad. Pour the dressing over the mixture and toss gently until everything is coated. Cover and refrigerate for at least 30 minutes before serving.
Notes
For a twist, consider adding diced mango or swapping in quinoa for a protein boost!
