Description
A quick 30-minute one-pan dish featuring tender chicken, peppers, and a rich, tangy cream sauce. The combination of smoky spices, fresh herbs, and pepperoncini brine delivers a zesty Mediterranean-American flavor. Perfect for weeknight meals.
Ingredients
1.5 lbs boneless, skinless chicken breast, cubed
1 jar (16 oz) pepperoncini, drained
1/4 cup reserved pepperoncini juice
1 medium onion, chopped
4 garlic cloves, minced
2 tbsp olive oil
1 cup chicken broth
1 tbsp Italian seasoning
1 tsp red pepper flakes (adjust to taste)
1 cup heavy cream
Fresh parsley, chopped (for garnish)
Instructions
Pat chicken cubes dry and season with salt and pepper
Heat 1 tbsp olive oil in a skillet over medium-high heat
Add chicken in a single layer; cook 5-7 minutes per side until browned
Transfer chicken to a plate and set aside
Using remaining oil, cook onion for 5 minutes until softened
Add garlic and sauté 1 minute until aromatic
Pour in reserved pepperoncini juice, scraping up browned bits
Return chicken to skillet
Add peppers, broth, Italian seasoning, and red pepper flakes
Simmer 5 minutes on medium heat
Stir in heavy cream and cook 5 minutes until slightly thickened
Garnish with fresh parsley before serving
Notes
Use cast-iron skillet for better searing and heat control
Pepperoncini juice helps balance acidity and enhance crust browning
Adjust red pepper flakes incrementally for desired spiciness
For a crisper finish, try broiler mode for final 2 minutes
Pair with steamed rice or crusty bread to soak up sauce
