A delightful twist on the classic dish that combines creamy flavors with a satisfying crunch, perfect for gatherings or casual dinners.


Ingredients

  • 8 ounces small pasta, like elbows or ditalini
  • 3/4 cup mayo
  • 1 tablespoon pickle juice
  • 1 tablespoon Dijon mustard
  • 6 hard boiled eggs, peeled and diced
  • 1/2 cup red onion, finely chopped
  • 1/3 cup chopped pickles
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika, plus more for serving
  • Salt and pepper to taste
  • Green onions, sliced for serving

Instructions

  1. Cook the pasta according to the package instructions, then drain and rinse it under cold water.
  2. Mix in a large bowl the cooled pasta with mayo, pickle juice, Dijon mustard, diced hard-boiled eggs, red onion, pickles, garlic powder, paprika, and salt and pepper.
  3. Chill the salad for at least 30 minutes in the refrigerator.
  4. Serve by sprinkling additional paprika on top and garnishing with sliced green onions.

Notes
