- 4 cups green cabbage, thinly sliced
- 1 cup carrots, shredded
- 1 cup pineapple, diced
- 1/2 cup Greek yogurt
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- 1/4 cup chopped green onions
Instructions
- Prep your produce by slicing or shredding the cabbage and carrots, dicing the pineapple, and chopping the green onions.
- Make the dressing by whisking together Greek yogurt, honey, apple cider vinegar, salt, and pepper.
- Combine the cabbage, carrots, and pineapple in a bowl. Pour the dressing over and toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For a thinner dressing, add 1-2 teaspoons of water or vinegar. Taste and adjust seasoning before serving.
