Description

A delicious and refreshing apricot sorbet perfect for warm days, featuring sweet and tangy flavors made from fresh apricots.


Ingredients

  • 2 cups chopped and pitted apricots (approximately 8 apricots)
  • 2 tablespoons fresh lemon juice
  • 1 cup hot water
  • 1 cup granulated sugar

Instructions

  1. Prepare apricots: Start by placing the chopped apricots in a food processor along with the fresh-squeezed lemon juice. Blend the mixture until it reaches a smooth consistency.
  2. Strain the mixture: Pour the apricot mixture into a fine sieve set over a bowl. Using a soup ladle, gently press the mixture through the sieve. Rotate the ladle in a circular motion, allowing the smooth sorbet mixture to pass through while leaving the thick pulp behind. Discard the pulp.
  3. Dissolve sugar: In a separate bowl, combine the hot water with the granulated sugar. Stir until the sugar has completely dissolved. Allow the mixture to cool before adding it to the strained apricot mixture.
  4. Chill: Cover the combined apricot mixture and store it in the refrigerator for at least one hour, or overnight if you have time. This chilling step is essential for the best flavor and texture.
  5. Churn the mixture: Once chilled, pour the apricot mixture into the frozen bowl of an electric ice cream maker. Churn the mixture according to your machine’s instructions until it reaches a soft-serve consistency, usually about 20 minutes.
  6. Freeze: Transfer the churned sorbet into a freezer-safe container. Place it in the freezer for at least one hour or until fully frozen.

Notes

Choose ripe apricots for the best flavor. If you prefer a tangier sorbet, increase the lemon juice slightly.
