Description

A fluffy Mexican omelette packed with sautéed vegetables, melty cheese, and vibrant flavors. Perfect for a quick, satisfying meal that blends Latin American-inspired ingredients with classic technique.

Ingredients

Scale

3 large eggs
4 oz milk of choice (dairy or almond/oat)
1 tbsp olive oil (or avocado/grapeseed oil)
3 tbsp chopped onion
1/4 cup chopped bell pepper
Half Roma tomato (or cherry tomatoes/canned diced tomatoes)
1/2 cup shredded Mexican cheese (Oaxaca, Muenster, or similar)
Pinch of salt (optional)
Avocado, salsa, or cilantro for topping

Instructions

Whisk eggs and milk until fully homogenized with no streaks
Heat oil in a nonstick skillet over medium heat until shimmering
Add onion, bell pepper, and tomato; cook 3 minutes until softened
Wipe pan if needed, pour in egg mixture; cook undisturbed until nearly set
Sprinkle warmed vegetables and cheese across the center
Fold omelette in half and cook 1-2 minutes on medium-low until cheese melts
Slide onto a plate and top with avocado, salsa, or cilantro

Notes

Use preheated skillet for even cooking
Add a pinch of salt to enhance flavors
Keep vegetables warm before adding
Adjust cheese amount based on desired melty texture
