Ingredients

- 2 cups cooked potatoes, cubed
- 1 cup corn kernels (fresh or canned)
- 1/2 cup red onion, diced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Combine the potatoes, corn, and red onion in a large bowl.
- Mix together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a separate bowl.
- Pour the dressing over the potato mixture and stir gently to combine.
- Fold in the chopped cilantro.
