Ingredients
2 large eggs (room temperature)
1 cup sugar (brown sugar preferred)
1/2 cup vegetable oil (canola or coconut oil)
1/2 cup orange juice (freshly squeezed)
1 cup shredded unpeeled zucchini (moisture squeezed out)
1 1/2 cups all-purpose flour (gluten-free optional)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tbsp orange zest
1 tsp cinnamon
1/4 tsp cloves (or nutmeg)
1/2 cup chopped nuts (walnuts or pecans)
1 cup powdered sugar (sifted)
2 tbsp orange juice (glaze)
Instructions
Preheat oven to 350°F (175°C)
Grease and flour two 8 1/2″ x 4 1/2″ loaf pans
Shred unpeeled zucchini and squeeze dry using cheesecloth
In a bowl, whisk together eggs and sugar until light and fluffy
Add vegetable oil and orange juice, mix well
Stir in shredded zucchini
In a separate bowl, whisk together flour, baking powder, baking soda, salt, orange zest, cinnamon, and cloves
Gradually add the dry ingredients to the wet mixture, stirring until just combined
Fold in chopped nuts
Divide the batter evenly between the prepared loaf pans
Bake for 50 minutes or until a toothpick inserted in the center comes out clean
While the bread cools, prepare the glaze by mixing powdered sugar and 2 tbsp orange juice to desired consistency
Drizzle glaze over the cooled bread
Notes
Zucchini must be well-squeezed to prevent sogginess.
For extra flavor, add a pinch of nutmeg or cardamom.
This bread can be stored in an airtight container for up to 5 days or frozen for up to 3 months.
