Description

A creamy, subtly spiced Mexican-inspired oatmeal made with cinnamon, evaporated milk, and honey. Slow-simmered for a custard-like texture, this comforting breakfast staple is easy to customize and deeply aromatic.

Ingredients

Scale

1 cup water
12 cinnamon sticks or 1 tsp ground cinnamon
Dash of salt
1 cup old-fashioned rolled oats
1 cup evaporated milk
1/2 cup honey
1 tsp vanilla extract

Instructions

Simmer Cinnamon-Infused Water
Combine water, cinnamon sticks, and salt in a saucepan. Bring to a boil.
Add Oats and Monitor Boil
Reduce to medium-low heat, stir consistently to prevent boiling over.
Balance Liquid Ratio
Wait until most water evaporates, then add evaporated milk. Thicken over low heat.
Finish With Sweeteners
Add honey and vanilla, stir thoroughly, and remove from heat.

Notes

Use a non-stick saucepan to prevent sticking
Cinnamon sticks (vs ground) yield better aromatic infusion
Adjust honey based on sweetness preference
Servings can be chilled and reheated later
