Ingredients
1 2/3 cups all-purpose flour
1 tsp baking powder
1/3 cup vegetable oil
1/2 cup peanut butter
2/3 cup brown sugar
1 cup chocolate chips
1 1/2 cups shredded zucchini (do not drain)
Instructions
Whisk dry ingredients in large bowl
Combine wet ingredients in medium bowl
Blend wet into dry ingredients until just moistened
Grease 9×5-inch loaf pan
Spoon batter into pan
Bake 55-60 minutes at 350°F with foil covering
Insert toothpick at 2-inch depth to test doneness
Chill 1 hour before slicing

Sprinkle coarse sugar for crunchy topping
