Description

A bright, healthy snack that blends sweet dried fruit with wholesome oats and coconut for natural energy on the go.


Ingredients

  • 1 cup dried apricots
  • 1 cup oats (rolled oats are best)
  • 1/2 cup shredded coconut (unsweetened preferred)
  • 1/4 cup honey or maple syrup (use maple syrup for vegan)
  • 1 teaspoon orange zest

Instructions

  1. In a food processor, combine dried apricots, oats, shredded coconut, honey (or maple syrup), and orange zest.
  2. Pulse until the mixture is well combined and sticky. Scrape down the sides as needed.
  3. Use your hands to form small balls from the mixture, about 1 inch in diameter (or size to your preference).
  4. Place the balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to set.
  6. Store in the fridge or freezer for an easy grab-and-go snack.

Notes

For best results, chill the mixture to help shape it and add a pinch of salt or extra citrus if needed.
