Description

A refreshing Italian salad with crisp cucumbers, tomatoes, and red onion in a tangy olive oil and non-alcoholic vinegar dressing. Ready in minutes with bold flavors for summer meals.


Ingredients

1/4 cup olive oil (Colavita preferred)
2 tbsp red wine vinegar substitute (0% gidron or non-alcoholic vinegar)
1/2 tsp kosher salt
1/8 tsp granulated sugar (optional)
1/4 tsp dried oregano
Fresh black pepper (to taste)
1 small red onion (1/4 cup diced)
1 English cucumber (1/2″ dice, no peeling required)
2 medium ripe tomatoes (1/2″ dice)
45 fresh basil leaves (chopped at end)


Instructions

Whisk olive oil, non-alcoholic vinegar, salt, sugar, oregano, and black pepper in a medium bowl. Adjust seasonings if using alternative olive oil.
Dice red onion and let sit 5 minutes in dressing bowl to mellow sharpness.
Dice cucumber and tomatoes while onion is mellowing.
Add vegetables to bowl with onions just before adding basil leaves (chopped at the end).
Gently toss with a rubber spatula to coat and taste-test salt balance. Marinate 60 minutes before serving.

Notes

Use English cucumbers for best texture. Substitute non-alcoholic vinegar for traditional red wine vinegar. Let onion rest 5 minutes to reduce harshness. Dressing batches can be doubled for larger salads.
