Ingredients
4 boneless, skinless chicken breasts (pounded to 1/2-inch thickness)
2 tbsp olive oil (light or extra virgin)
1 1/2 tsp Italian seasoning
3/4 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt (preferably coarse sea salt)
1/4 tsp black pepper (can use white pepper)
4 slices fresh mozzarella cheese (BelGioioso preferred, ~400g total)
4 thick slices fresh ripe tomato (avoid canned)
4 large fresh basil leaves (plus extra for garnish)
2 tbsp balsamic glaze (high-quality reduction or homemade)
Instructions
Preheat grill to medium-high (400°F or 200°C)
In a bowl, combine olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper
Generously brush the seasoning mixture on both sides of each chicken breast
Place chicken on grill and cook 5 minutes per side
After first 5 minutes, place a mozzarella slice and tomato (per breast) on top
Cover and cook an additional 3-4 minutes until cheese begins to melt
Remove from grill, top each with a basil leaf
Drizzle each serving with balsamic glaze before serving
