Ingredients
Scale
- 2 tablespoons vegetarian oyster sauce
- 2 teaspoons soy sauce
- 1 1/2 tablespoons peanut oil
- 4 eggs, beaten
- 1/2 thumb ginger, minced
- 2 green onions, sliced (reserve a small portion for garnish)
- 12 oz garlic scapes, sliced into 1-inch pieces
Instructions
- Mix the oyster sauce and soy sauce together in a small bowl. Set aside.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat until hot. Add the eggs and let cook for a few seconds until the bottom sets. Scramble the eggs lightly until just cooked through, then transfer them to a plate and set aside.
- Add the remaining 1/2 tablespoon of oil, ginger, and green onion. Stir a few times to release the fragrance.
- Add the garlic scapes and stir and cook for 2 minutes until it starts to soften. Pour in the oyster sauce mixture and stir to mix well.
- Return the eggs to the pan and stir for another 30 seconds. Transfer everything to a large serving plate and garnish with the remaining green onions. Serve hot over rice.
