- 4 large potatoes
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/4 cup milk
- 4 strips smoked turkey bacon, cooked and crumbled
- 3 green onions, chopped
- Salt and pepper to taste
- 1/2 cup butter
Instructions
- Preheat the oven to 350°F (175°C).
- Bake the potatoes in the oven for about 60 minutes or until tender.
- Allow the potatoes to cool slightly, then cut them in half and scoop out the insides into a mixing bowl.
- Mash the potato insides with butter, sour cream, milk, salt, and pepper until smooth.
- Stir in half of the cheddar cheese, smoked turkey bacon, and green onions.
- Refill the potato skins with the mashed potato mixture and sprinkle the remaining cheese on top.
- Place the filled potatoes back in the oven and bake for an additional 20 minutes until heated through and cheese is melted.
- Serve hot.
Notes
For the best texture, use starchy potatoes like russets. Adjust seasonings to taste and feel free to customize with different mix-ins.
