- 2 pounds of potatoes
- 4 slices of smoked turkey bacon, cooked and crumbled
- 1 cup of shredded cheddar cheese
- 1/2 cup of sour cream
- 1/4 cup of mayonnaise
- 2 tablespoons of Dijon mustard
- 1 tablespoon of apple cider vinegar
- 1/4 cup of green onions, chopped
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, then drain and let cool.
- Whisk together sour cream, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper to make the dressing in a large bowl.
- Cut the cooled potatoes into cubes and add to the bowl with dressing.
- Add crumbled bacon, shredded cheddar cheese, and chopped green onions.
- Gently mix until everything is well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Chilling for at least 30 minutes helps meld the flavors, and it’s often better the next day. Use Yukon Gold or red potatoes for best texture.
