Description

Fresh and vibrant Vietnamese summer rolls filled with tender chicken, crisp vegetables, and aromatic herbs, perfect for a light meal or party.


Ingredients

  • Rice paper wrappers
  • Cooked chicken breast, shredded
  • Rice vermicelli noodles
  • Lettuce leaves
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Carrots, julienned
  • Cucumber, julienned
  • Dipping sauce (such as peanut sauce or hoisin sauce)

Instructions

  1. Prepare the rice vermicelli noodles according to package instructions and set aside.
  2. Dip a rice paper wrapper in warm water for a few seconds until softened, then lay it flat on a clean surface.
  3. Place a small amount of cooked chicken, noodles, lettuce, herbs, carrots, and cucumber in the center of the wrapper.
  4. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom up to form a spring roll.
  5. Repeat with the remaining wrappers and ingredients.
  6. Serve the summer rolls with your choice of dipping sauce.

Notes

Choose fresh ingredients for the best flavor. Soak rice paper properly and don’t overfill the rolls.
