Ingredients
- Rice paper wrappers
- Cooked chicken breast, shredded
- Rice vermicelli noodles
- Lettuce leaves
- Fresh mint leaves
- Fresh cilantro leaves
- Carrots, julienned
- Cucumber, julienned
- Dipping sauce (such as peanut sauce or hoisin sauce)
Instructions
- Prepare the rice vermicelli noodles according to package instructions and set aside.
- Dip a rice paper wrapper in warm water for a few seconds until softened, then lay it flat on a clean surface.
- Place a small amount of cooked chicken, noodles, lettuce, herbs, carrots, and cucumber in the center of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it tightly from the bottom up to form a spring roll.
- Repeat with the remaining wrappers and ingredients.
- Serve the summer rolls with your choice of dipping sauce.
Notes
Choose fresh ingredients for the best flavor. Soak rice paper properly and don’t overfill the rolls.
