Ingredients
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3/4 teaspoon granulated garlic
1 cup grated sharp cheddar cheese
3/4 cup grated zucchini
2 tablespoons chopped chives
3 tablespoons honey
12 ounces non-alcoholic beer (1 1/2 cups)
3 tablespoons butter
Instructions
Preheat oven to 375°F (190°C). Butter a 9×5-inch loaf pan.
In a medium bowl, whisk together 3 cups flour, 1 tbsp baking powder, 1 tsp salt, and 3/4 tsp granulated garlic until homogenous.
Stir in 1 cup grated cheddar cheese, 3/4 cup zucchini, and 2 tbsp chopped chives using a rubber spatula.
Drizzle 3 tbsp honey over the mixture and stir until combined.
Pour in 12 oz non-alcoholic beer and 3 tbsp melted butter, mixing gently until just incorporated.
Transfer batter to prepared loaf pan. Bake for 55-70 minutes until golden and a toothpick inserted in the center comes out clean.
Cool completely in the pan before slicing into 10 pieces.
Notes
Measure flour accurately using the spoon-and-level method.
For lactose intolerance, use clarified butter.
Store in an airtight container at room temperature for up to 3 days.
Substitute chives with 1 tbsp fresh parsley if needed.
Use a coarse grater for zucchini to maximize texture.
